Three Ways to Simplify Dinners

Are dinners crazy in your household? Do you feel like you don’t have enough time or energy to prepare a healthy dinner in the evening for you and your family? Would you like some tips to help your evening routine be easier while having a healthy and tasty meal?  It just takes a little planning and prep.  Here are 3 easy and quick tips to simply your dinner this week:

  1. If you want to eat healthy, a meal plan is a must.  But it doesn’t have to be tedious or gourmet. Something as simple as on Monday, Wednesday, and Friday eat soups, salad, and fruit; then on Tuesday and Thursday eat a baked protein like chicken or fish, sautéed veggies (like beans, cauliflower, or asparagus); on Saturday eat out or grill, and Sunday evening is a smorgasbord (everyone eats leftovers in the fridge).
  2. After you’ve planned your meals and written your grocery list, pick up pre-cut veggies. Several of my local stores have pre-cut vegetables like zucchini slices and spirals, butternut squash pieces or spirals, and sweet potato spirals or sticks. There are bags of green beans, soup starter veggies (chopped onions, celery, garlic, or peppers), and even cut up cauliflower. You can use these as a base for several tasty soups like beef or vegetable stew, vegetable soup, or chicken vegetable soup.
  3. Pick up a whole chicken and plan to cook it in your crockpot or instant pot. Prep it the night before you will cook it by adding the chicken and seasonings, onions, carrots, or other veggies to the pot. Stash the pot in the refrigerator. The next morning you add a cup or two of water (or broth), turn on the crock pot (or instant pot), and you’ll have a delicious meal when you get home from work. Plus, your house will smell wonderful!  You’ll also have leftover chicken for meals during the week, and you can use the chicken carcass to make homemade chicken broth later that week. Win-win!
