Heading back to work or school and needing an easy lunch ideas? That are also healthy? Make up a few Salad jars using mason jars. Or you can use containers with snap-on lids.
Tips:
*Chop up veggies, chicken or turkey cubes, and fruit.
*Chop up mixed salad greens (so you don’t need a knife and don’t choke on a large lettuce leaf)!
*Into your jars add dressing, veggies, protein, and fruit first, then nuts or seeds, and add greens last.
*Place half a paper towel on the top to absorb moisture and help greens stay fresher longer. Then seal.
*If you don’t want to add dressing to the bottom of the jar, then you can use small containers to hold your dressing (easy homemade – olive or avocado oil, balsamic vinegar or lemon juice, seasonings like salt, pepper, garlic powder, basil, and oregano).
*Pack in lunchbox. (Don’t forget your fork!)
*When ready to eat, pour onto a plate, add dressing, and enjoy. Click here for a couple of tasty salad dressings.
*Ideas for veggies, fruits, and nuts/seeds include carrots, roasted squash, sweet potatoes, parsnips, or zucchini, cucumber, radishes, blueberries, strawberries, avocado or apples (with lemon juice to prevent browning), toasted pumpkin seeds, sunflower seeds, or cashews.
Note: these are great to make up on weekends to last a few days no matter if you work at home or outside your home. And if you’re homeschooling, these are easy for you or even your kids.
