How to Prep Once, Eat Twice

Has this ever happened to you?

You wake up and already know you have several options in the fridge for dinner for the next several days? Or you have several options already for breakfast and lunch for you and your family?

If that’s you, then you know what a great feeling that is. But if that’s not you, yet…..

You can eat healthy and prepare healthy meals in simplified ways and not spend all day every day in the kitchen. Even if you have chronic health issues, autoimmune, or digestive issues.

But it takes a little thought and planning.

And that’s what I’m here for. That’s part of what health and wellness coaches do. We help you figure out how to make health and nutrition fit into an already busy schedule. Even when you have fatigue, pain, autoimmune or digestive issues.

Here are 3 things I do:

  1. Prep once, eat twice! We grill chicken, turkey or beef burgers, and other meats on the weekend (and we usually grill 2 or 3 times what’s needed for that meal). When you do this, you can store extras in the fridge for the week and/or freeze for future meals. Prep once, eat twice is one of my favorite tips for meal prep!
  2. Roast one or two trays of vegetables on the weekend. Use a variety of diced veggies like carrots, butternut squash, turnips, parsnips, zucchini, yellow squash, onions, etc. Then you store in your fridge to use during the week. Or freeze for later. Click here for an easy recipe.
  3. Make up smoothies after dinner for your quick breakfast or snack tomorrow. This helps you grab and go when you have a busy day. I hope you can pick one of those three strategies to implement this week. You’ll see that eating healthy is doable when you simply do a little planning and prepping. You can eat any of the above for any meal – breakfast, lunch, or dinner. I love savory breakfasts. And you’ll find you’re less stressed at that dreaded 5:00 hour because you’ll already know what you’re having for your dinner!
